Busy holiday weekend? Check out this healthy and refreshing holiday-themed salad. Using in-season ingredients, this side dish will lighten up any meal and is an easy go-to for any BBQ or family party.
6 cups Baby Kale, washed
1/2 pint Blueberries, washed
2 cups Watermelon, seedless
2 ounces Goat or Feta Cheese (crumbled)
1/2 Lime, juiced
2 tbsp Olive Oil, ideally citrus infused
Salt & Pepper to Taste
1.) Combine kale, blueberries, and watermelon.. Gently toss.
2.) Top with cheese, salt, pepper, lime juice, and olive oil. Lightly mix to disperse.
Not only does this recipe use refreshing local, summer ingredients, but its juice-filled fruits help to limit the need for dressing. Packed with plenty of superfoods, it will give a healthy twist to any main entree. The red, white, and blue finish doesn't hurt either!
