I have Eating Well Magazine to thank for combining my love for breakfast and superfoods with this recipe! Not only is it both fueling and filling, but it was also delicious and easy to make. I paired it with a side of sautéed, seasoned kale for more veggies and a meal that was nothing less than super. Eggs, kale, and cauliflower are the main ingredients and superfoods that make up this super plate. Eggs are one of my favorite superfoods because they're so easy to prep and versatile! Despite egg whites being lower in calories and cholesterol and carrying the majority of the egg’s high-quality protein, the whole egg still comes out on top nutritionally. See why with this Prevention Food Face-Off. I most often recommend whole eggs, unless cholesterol is a current or genetic concern. If you’re an egg lover like me, choose free-range organic options.
Kale is all the craze these days and is an antioxidant powerhouse. With more than twice the amount of antioxidants tha any other leafy green, kale is packed with folate, fiber, and vitamins A, K, and C. Taking the place of the potatoes in your typical frittata, cauliflower offers a lighter, more nutrient dense replacement without changing flavor. Topped with goat cheese and paired with an extra side of veggies, this frittata makes for an awesome, healthy dish for any meal. Enjoy!
