Kale is all the craze these days and is an antioxidant powerhouse. With more than twice the amount of antioxidants tha any other leafy green, kale is packed with folate, fiber, and vitamins A, K, and C. Taking the place of the potatoes in your typical frittata, cauliflower offers a lighter, more nutrient dense replacement without changing flavor.
