Make a traditional not-so-good for you favorite into a veggie-packed treat. Pizza is one of my favorite foods and no matter how many times I hear how unhealthy it is, I am constantly trying to emphasize its potential. Paired with a side of veggies or salad, this favorite can easily turn into the foundation of a balanced plate. The nutty, honey flavor of the fontina cheese really helps to compliment this sweet and savory combination. I used a whole wheat crust (shout out to Trader Joe's!! This is one of my favorites), lots of veggies, and a little bit of savory to bring out the deliciousness and nutrition.
1 Trader Joe’s 100% Whole Wheat Pizza Dough
4 oz. Semi-Soft Fontina Cheese, thinly sliced or grated
1-1.5 cups Butternut Squash, ½ inch cubes
1.5 cups Kale, cut into long shreds
2 slices Applewood Smoked Bacon (uncured), diced and lightly sautéed
2 Tsp Olive Oil
Balsamic Reduction Glaze
